EASTER SEASON OPPORTUNITIES:

One of St. Paul's most enjoyable outreach activities is filling Easter Baskets for the Clark County Youth Shelter. Currently there are 10 middle- and high school girls and boys. Please see Debbie Tucker for information.

 

Nothing says Easter Sunday like the smell of Easter Lilies. You are invited to reserve yours. Please see Phyllis for more details.

 

Please bring your aluminum cans to church for recycling. Mike Nelson is coordinating this ministry of conservation and environmental care!

 

Everyone has a pair of old, worn-out, never-wear-again shoes. Bring them to church for Project Waterstep, a program that recycles shoes and uses the money to fund clean water projects in developing countries.

 

 

RECIPE OF THE WEEK: ZESTY RICE & BEAN SALAD

This week’s recipe comes from Phyllis Nelson, and was served at the Pitch-In lunch last week:

 

2 T Olive Oil 1 15 oz can black beans

1 garlic clove, minced (drained & rinsed)

½ t ground red pepper 1 15 oz can kidney beans

½ t grated lime rind (drained & rinsed

¼ C fresh lime juice 4 green onions, chopped

¼ C chopped fresh cilantro

¼ C chopped fresh mint

2 C cooked brown rice ¼ C crumbled feta cheese

 

Whisk together first six ingredients in a large bowl; add rice & next 5 ingredients, tossing to coat. Cover & chill 1 hour if desired.

 

Prep: 40 minutes
